How to Avoid the Potential Dangers of Herbed Oils

Herbed oils can be wonderfully tasty additions to salads, marinades and stir fries, and as a dip for crusty breads. They are great to cook with, and make a wonderful gift. This is an excellent way to preserve flavor, aroma and the health benefits of your fresh herbs.

Prepare an herbed oil by combining two cups of a culinary oil with a half cup of finely chopped and cleaned fresh herbs or a quarter cup of your home-dried herbs. Thoroughly dry all washed herbs before adding them to the oil. Appropriate oils would include olive oil, safflower, sunflower, peanut, grapeseed, or peanut oil. Use your imagination and taste in selecting the herbs; but try garlic, basil, tarragon, rosemary, thyme, and salad burnet.

Some recipes call for just steeping the oil/herb mixture at room temperature until the flavor and aroma are to your liking. Make sure you have used a sterilized container and lid, and that the herbs are totally immersed in the oil. After a week, strain out the herbs completely, and bottle the flavored oil, again using sterile conditions and containers.

Other recipes call for heating or sauteing clean fresh herbs in the oil for a few minutes at a low temperature. When the desired flavor is achieved, the herbs are filtered out using several layers of cheesecloth, and the oil is stored in sterilized bottles and sealed. The trick with either method is to make sure there is no moisture or bits of herbs left in the oil before you bottle it.

Because there are potential dangers of storing herbs in oil, never place sprigs of herbs in the finished bottle. Although this may look attractive, you are encouraging bacterial growth. Even if the oil is stored in the refrigerator, slow bacterial contamination can happen.

Two problems can occur with any herbal oil that has been infused. One is the growth of C.botulinium, a potentially dangerous problem; the other is rancidity. These two problems are not necessarily related. Botulism toxin can be present without any off-odor, while rancid oils will have a definite off-odor. Botulism will grow in a low acid environment, and in anaerobic conditions, both of which are met with oils.

Rancidity happens when oils are exposed, over time, to air, sunlight and heat. Rancidity will not make you sick, but could be unhealthy over time, since rancid fat contains certain chemicals that can damage cells and encourage cholesterol. Always discard any oils that have a noticeable off odor.

There are certain precautions you can take when making these flavorful oils for home use. By using dried herbs in making herbal oils, you are less likely to encourage botulism because of their low water content. Always store your herbal oils in the refrigerator, and you will greatly reduce the likelihood that these two problems will occur. The FDA recommends that you make any garlic-infused oils fresh, do not allow them to remain at room temperature, and discard them after only ten days. Use all other prepared and refrigerated herbal oils within three weeks, and after that, discard them.

How to Make Delicious Cookies That Are Easy to Ship to Soldiers, Kids at College, Etc - #6

Everyone loves a good homemade cookie and I can't think of anything that would say "home" to your soldiers or kids away at school than a package of homemade cookies. This old-fashion recipe for Peanut Butter Fingers will save "I love you" to anyone receiving them. If they will be in transient for a long period of time or to a very hot climate you may want to use a very light chocolate coating or skip it altogether. However, for most situations, it should work fine.

PEANUT BUTTER FINGERS
This recipe is from an old grocery store give-away years ago.

1 pkg active dry yeast
2 tbsp water at 105 to 115 degrees (warm)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1/2 cup creamy peanut butter
1/4 cup butter, softened
1/4 cup shortening
1 1/2 cups all-purpose flour (or 3/4 cup all-purpose and 3/4 cup whole-wheat)
3/4 tsp baking soda
1/4 tsp salt
Cocoa Glaze: Recipe follows

Dissolve the yeast in the warm water in a large bowl. Mix in the granulated sugar, brown sugar, egg, peanut butter, and shortening until smooth. Stir in the flour, baking soda and salt. Cover and refrigerate for 30 minutes.

Preheat oven to 375 degrees.

Remove dough from refrigerator and shape by teaspoonfuls into 2 1/2-inch fingers on ungreased cookie sheets. Bake until lightly browned, about 8 minutes. Cool on wire rack. Make the cocoa glaze and dip one end of each cookie into the cocoa glaze.

COCOA GLAZE:

1 1/2 cups powdered sugar
1/4 cups baking cocoa
3 tbsp milk
1 tsp vanilla

Mix the powdered sugar and cocoa in a medium bowl. Stir in the milk and the vanilla until smooth. Gradually add more milk, 1/2 teaspoon at a time, until of dipping consistency, if needed.

Barbecued Dragon Chicken Wings

Barbecued dragon chicken wings are really easy to make, and you eat them with your fingers. My favourite type of barbecue food! To save time I make the sauce for them the night before and keep it in the fridge until it's needed.

Serves: 6

Preparation: 10 minutes

Cooking time: 25 to 30 minutes

Ingredients

* 18 chicken wings
* Oil for cooking

For the sauce

* 9 fl oz (250ml) of cider vinegar
* 1 tablespoon of coarse sea salt
* 1 teaspoon of freshly ground black pepper
* ! teaspoon of paprika
* I small, roasted red pepper chopped
* freshly ground black pepper to taste
* 9 fl oz (60ml) of vegetable oil
* 2 tablespoons of Worcester sauce
* 2 tablespoons of lemon juice
* 1/2 teaspoon of dried chilli flakes

1. Place all of the ingredients into a blender and mix well together. Pour the sauce into a jug or bottle.

2. Rub the chicken wings with the oil and cook over a hot grill for about 10 to 15 minutes. Stir the sauce and drizzle it over the wings every few minutes.

3. Turn over and repeat for the other side. The sauce will separate and so will need stirring frequently prior to drizzling.

4. Serve your barbecued spicey chicken wings while they're hot.

Tip: Use a digital thermometer for cooking Barbecue Chicken

A basic digital thermometer is designed to take a temperature reading in about 10 seconds and cannot stay in the food during cooking. Remove the chicken from the heat and slide the thermometer into the thickest part of chicken pieces or into the breast on whole birds. Check the temperature reading.

If the temperature is too low, remove the thermometer and put the chicken back on the heat to finish cooking. If the temperature is right, the chicken is ready to eat.

Caribbean Fire BBQ Chicken

Preparation time: 15 minutes
Marinade time: 2 hours in a refrigerator, or overnight if possible
Cooking time: 30 minutes

Serves 6

Ingredients

6 chicken portions
3 small hot chillies (birds eye or Scotch Bonnet), deseeded for a milder strength
3 pieces of fresh root ginger, about 1" (25mm) cube each
6 spring onions, trimmed
2 to 3 cloves of garlic
1/2 teaspoon of ground allspice
1 teaspoon of paprika
1 teaspoon of dried thyme
pinch of ground cinnamon
pinch of ground cloves
5 tablespoons of light soy sauce
6 tablespoons of white wine vinegar
freshly ground black pepper

1. Place the spring onions, chillies, garlic, ginger, thyme, paprika, allspice, cinnamon, cloves, wine vinegar, soy sauce and pepper in a food processor and make into a smooth paste.

2. Place the chicken portions in a dish and pour the mixture over. Turn the portions so that they are well coated. Transfer to a refrigerator and leave to marinade for at least 2 hours, overnight if possible.

3. Remove the chicken from the dish, keeping the marinade for basting, and grill over hot coals for about 30 minutes. Turn occasionally and baste with the remaining marinade.

4. Serve at once on individual plates.

Tip: Cooking a Whole Barbecue Chicken

For whole birds and other foods that take longer to cook, consider a heat proof digital thermometer. These have a base unit that sits on the counter and a heat proof cord that connects the temperature probe to the base unit.

The probe stays in the food during cooking and the base unit displays the temperature throughout the cooking time. Slide the probe into the breast on a whole chicken.

Connect the cord to the base unit. Turn the base unit on and follow the manufacturers instructions for setting the desired end temperature. Once the end temperature is reached, remove the chicken from the heat.

Using a meat thermometer when barbecuing any meat is highly recommended for the best and most hygienic results.

Spicy BBQ Lime Chicken Wings Recipe

Served as an appetizer or entrée, lime juice gives a delightful tang to these marinated baked chicken wings.

You can also use this recipe on an outdoor barbecue. Try the marinade and sauce on other cuts of chicken (such as pre-cut chicken tenders) as well as pork.

Ingredients

* 1 cup ketchup
* 1/4 cup fresh Key lime juice or Persian lime juice
* 2 tablespoons liquid smoke
* 1 tablespoon Worcestershire sauce
* 1 tablespoon balsamic vinegar
* 2 tablespoons brown sugar, packed
* 1 teaspoon hot pepper sauce, or to taste
* 1 teaspoon granulated garlic powder
* 1/4 cup minced sweet onion
* 4 pounds meaty chicken wing pieces, joints separated and tips discarded (or save tips for making stock), about 24 pieces

Directions

In small bowl, combine ketchup, lime juice, liquid smoke, Worcestershire sauce, balsamic vinegar, brown sugar, hot pepper sauce, garlic powder, and sweet onion.

Stir until well-combined. (Yields about 1-1/2 cups of marinade.) Place chicken wing pieces into large freezer zip-top bag. Pour in marinade, squeeze out air, and seal.

Turn bag over and over until chicken wings are coated with marinade. Refrigerate at least two hours or overnight. Preheat oven to 325°. Place wings on baking rack nestled inside a baking pan.

Bake about 1-1/2 hours, basting with boiled marinade sauce during last half hour. While chicken wings are cooking, bring reserved marinade to boil in small saucepan.

Let boil for five minutes. Thirty minutes before wings are done, baste chicken wings with boiled marinade sauce, and continue cooking until wings are tender. Makes 8 appetizer or 3 entree servings.

Don’t you just love strawberries? They are so succulent and bittersweet. And they compliment so many foods, snacks and deserts. And yes, especially deserts!


One of the first things you think of when it comes to strawberries is strawberry shortcake! Nowadays, you can buy the little cakes at the store in a package. Simply slice up the strawberries in some simple syrup (sugar and water), put them on the cakes, and put on some whipped cream topping! You’re good to go, and wow is it delish!


Strawberries are a great topping for any cake, basically, but especially angel food cake! Angel food cake is light and fluffy and has a unique texture unlike any other cake. And yes, this red, juicy fruit goes just as well with this kind of cake as it does with shortcake!


What about ice cream? You can get low-fat ice cream or frozen yogurt and top it with strawberries! You don’t have to mix the fruit with syrup this time, either, since the ice cream gives you the sweet flavor to balance out the sour in the strawberry. If you do want some liquid to cover the ice cream, you can mash up some strawberries in water (without sugar), for a healthy syrup! Tastes just as good—without the extra carbs and calories!


How about a good old strawberry pie? There are many ways to make strawberry pie, but one way is to buy strawberry pie filling, combine it with freshly sliced strawberries, and put it in a pre-made graham cracker crust (or a regular pie crust)! Yummy! Of course, you MUST serve it with whipped cream topping or ice cream (or both, if you’re really feeling adventurous!). Take it easy, too—this particular choice is high calorie!


Strawberries are great with sundaes. You can put them in with your favorite sundae toppings, like nuts, bananas, chocolate syrup, and so on!


And of course, everyone loves strawberry cheesecake! This is really easy to make! All you have to do it buy a cheesecake kit from the store and make it in a pie tin. No baking is required, although, you do have to put it in the fridge so it can set. When you serve it with strawberries (mixed in simple syrup) and whipped cream (optional), it is simply “to die for”! Might be a little rough on the waistline—oh, but what a way to go!


Strawberries are also a must in fruit salad. Combine them either whole or sliced with your favorite fruits. This can include pineapple, sliced apple, mandarin oranges, banana slices, grapes, or any other fruit you can think of! This too, tastes absolutely stunning with whipped cream. Walnuts really go well with this treat, as well!


I bet you could go for some parfait in the morning, or for a mid-day snack! Strawberries are a must, here, too! Take low fat yogurt and throw in your favorite fruits, sliced up. Then top it with granola and we’re talking healthy, mouth-watering goodness! This is a good alternative to having the ice cream or other deserts, too, since it’s easier to incorporate into your diet!


Strawberries and other fruits are also great with fondue, but watch it—that chocolate can be pretty high cal! And remember, fruit has carbs of its own! So always moderate with sweets!

Fishing For a Great Wine By Hillary Marshak

Recently my husband and I bought a new house with a kitchen that dated back to the 1950's. We decided that it had to be renovated right away, and, as anyone who has renovated a kitchen knows, you spend at least three months of that process eating out. So after two months of local restaurants and fast food joints, we decided to stray a little farther a field than our town and ended up at Champps Americana Restaurant Here I found a delightful White Zinfandel from Beringer which I paired with their Coconut Fried Shrimp. Crispy and light, this wine had a subtle flavor that didn't overwhelm the seafood.


The next day I went out, bought a bottle of Beringer White Zinfandel, and started trying it with a variety of fish dishes to see if my initial impression was correct. To my delight, it stood up to all of the dishes that I prepared with style and flavor. You might want to try this delightful wine with such great fish dishes as Baked Lemon Sole.


This is a very healthy dish because the fish is baked, not fried, and the sauce is quite light as well.


Ingredients


4 3 1/4 oz. sole fillets
2 tsp. fresh parsley, chopped
2 tsp. margarine, melted
1/8 tsp. pepper
2 tsp. lemon juice
1/8 tsp. paprika
2 Tbs. all-purpose flour


Directions


Rinse fillets thoroughly in cold water; pat dry with paper towels, and set aside. Combine melted margarine and lemon juice in a small bowl. Combine flour, chopped parsley and pepper in a shallow container. Dip fillets in margarine mixture and dredge in flour mixture. Transfer fillets to a nonstick baking sheet, and drizzle any remaining margarine mixture over fish. Sprinkle fillets with paprika. Bake at 375 degrees for 15-20 minutes or until fish is golden brown and flakes easily when tested with a fork. If a crisper texture is desired, broil baked fillets 4 inches from heat for 1 minute. Garnish each fillet with a lemon wedge and fresh parsley sprigs, if desired.

Shellfish are also a great way to serve fish and Shrimp Roll-ups are elegant and delicious.


These delicious roll-ups make an excellent appetizer - but make sure to prepare them the day before so they can marinate overnight.


Ingredients


2 8 oz. pkg. cream cheese, softened
1/2 C. cocktail sauce
Juice of 1/2 lemon
2 cans shrimp, not drained, finely shredded with fingers
1/2 C. mozzarella cheese, shredded
2 stalks celery, finely chopped
4-5 green onions, finely chopped
6-8 10' flour tortillas
1-1 1/2 C. additional cocktail sauce, for dipping


Directions


Microwave the cream cheese in a medium glass bowl, for 30-45 seconds, depending on the wattage of your microwave. Mix the cream cheese, cocktail sauce, and lemon together, until well-blended. Stir in shrimp, Mozzarella cheese, celery, and green onions. Mix well. Spread about 1/2 C. of the mixture onto each tortilla, and roll up tightly. Wrap each tortilla in plastic wrap, and refrigerate overnight, for flavors to meld. Slice rolls into 1/2' pieces, using a serrated knife and wiping often while cutting. Arrange on a serving dish, along with a bowl of cocktail sauce, for dipping.

And don't forget the appetizers with Grilled Prosciutto and Basil-Wrapped Shrimp , a colorful dish can be made as an appetizer or a full meal.


Ingredients


24 fresh basil leaves
12 thin slices Prosciutto, each cut in half lengthwise
24 extra-large shrimp, peeled and deveined, or large sea scallops
24 bamboo skewers, soaked in water for at least 30 minutes before grilling


Garlic Dipping Sauce:
1/3 C. red wine vinegar
2 Tbs. Dijon mustard
1 large clove garlic, chopped
1 C. olive oil


Directions


Place 1 basil leaf at the short end of a slice of Prosciutto and a shrimp on top of the basil. Roll the shrimp in the Prosciutto, then thread lengthwise onto a skewer. Repeat with the remaining basil, Prosciutto, and shrimp. Place the skewers on a baking sheet and refrigerate until ready to cook.


To make the sauce, combine the vinegar, mustard and garlic in a food processor or blender. With the machine running, add the olive oil in a slow, steady stream. Process until combined. 10-15 minutes before you are ready to grill, spoon about 1/3 of the sauce over the shrimp skewers to marinate. Transfer the rest of the dipping sauce to a small bowl. Prepare a medium-hot fire in a grill. Grill the shrimp, turning often, until opaque, about 6 minutes. Arrange the cooked skewers on a platter and serve with the dipping sauce on the side.

Many people are intimidated by the idea of cooking with wine. It sounds a little too fancy or even gourmet (that’s Greek for complicated). Maybe they are feeding a family and don’t like the idea of serving the little ones something with wine in it. However, often it is just a case of people not knowing how to cook with wine. It really is very simple and can be incorporated into anyone’s recipes.


Some of the advantages of cooking with wine include:


- very little makes a huge difference to the flavor and aroma of your dishes
- it instantly produces a richer, more complex taste to recipes
- you can easily experiment with it for different results
- if you choose to replace it in a recipe, it can be easily done with chicken, beef or vegetable broth


The first step for beginners wishing to cook with wine is to try adding it to spaghetti sauces. Red wines like Cabernet Sauvignon, Shiraz, Bordeaux and Merlot are wonderful in spaghetti sauces that are vegetarian or beef based. If the sauce is being served over chicken or is made with ground poultry, white wine works better. Even as little as 1/3 of a cup of wine adds a rich flavor to the entire batch of sauce that will cause people to come back for it time and again.


Another great and easy way to incorporate wine into your cooking is to create a sauce from the little bits of food left in the frying pan after frying meats. You simply pour in wine and gently scrape the pan as it cooks on the stove. This is actually a real cooking technique called deglazing. It makes a fantastic rich sauce to pour over vegetables or meat. An added bonus is your pan will also be easier to clean afterwards.


If you are cooking in the slow cooker or baking in the oven, you always need to add liquid. Wine is the perfect cooking liquid. It adds flavor and richness. White wine adds an irresistible intensity to fish baked in it. Red wine is wonderful to add to the slow cooker with a roast or in beef stew.


As you get bolder with your use of wine in cooking, explore some different recipes using it. They are very easy to find. Just a simple online search will provide you with numerous recipes. There are soups, desserts, main dishes, pastas, appetizers and more that feature any of a variety of wines in their ingredient list.


So remember to keep at least one red and one white wine on hand to give a little extra flavor to the dishes you prepare. Even inexpensive wines will add a little extra je-ne-sais-quoi in your food. (That’s French for yummy)


An important point to remember for anyone who brings it up, is that the alcohol in the wine burns off in the cooking process, leaving you with flavor and no intoxicating effects. It also doesn’t add any extra fat to the meals you are preparing. You will astound your friends with how sophisticated your cooking has become because of the great results wine produces in even every day dishes.

When you are having a party, there are a variety of factors to take into consideration when you are trying to select beverages. What you offer to drink will be very different at Christmastime than in the summer, or if your party is late morning versus early evening. Something for Everyone


It is important when having a party to include everyone’s drink taste and to have something available for all likes and dislikes. This does not mean that you need to offer every beverage known to man or that you need to have a full bar available. However, you might want to have on hand a white wine, a red wine, beer and a couple of hard liquor options, or a mixed drink like pitchers of margaritas or martinis. Be sure to keep a variety of mixes on hand, as well as non-alcoholic options for those who don’t want to drink alcohol.


A Formal Affair


If you are striving for a more formal tone, and are perhaps having a sit-down meal, then pre-dinner cocktails are in order. On the table you may have just a bottle or red wine and a bottle of white wine per each 4 guests. This gives your guests the choice. If you have help with serving, they may want to keep an eye on empty bottles and replace them as needed. Another great touch is an after dinner wine or a dessert wine. These wines can be enjoyed on their own or with a dessert, just be careful in matching the dessert wine to the dessert.

If you are celebrating a new job, an engagement, a wedding, a new baby, retirement or anything else, then your only choice is champagne or a sparkling wine. So lift your glass high and make a toast with some bubbly. It’s the perfect way to celebrate.

If your party is an outdoor one, like 4th of July or Cinco de Mayo, or even just an old-fashioned cookout, there are so many options for beverages. Having something for everyone is essential. Offering a pre-mixed fruity light drink will be a hit definitely. Mix up a batch of sangria with some red wine and fruit or a wine punch to dip into and you’ll have happy partygoers! Make sure you keep your summer party drinks cool for your guests and have lots on hand, especially if you are outside. Another consideration in hot weather is to make sure your guests avoid heat stroke, so keep lots of water on hand also to hand out, maybe alternating it with the alcoholic beverages.

Legendary Whiskey Cocktails By Sarah Martin

Sazerac


To make a Sazerac you will need two bottom heavy, 3 ½ ounce bar glasses. Fill one with cracked ice and water and allow it to chill. In the other glass place a lump of sugar along with just enough water to dampen it. The saturated lump of sugar can then be flattened and crushed with a spoon. Add a couple of drops of bitters, a dash of Angostura, a hearty shot of whiskey, for while bourbon may suffice for a julep it is not appropriate for a genuine Sazerac. In the glass containing sugar, bitters, and whiskey add quite a few lumps of ice and stir. A shaker is not necessary to make this drink.


Next empty the first glass of ice, add in several drops of absinthe, swirl the glass around a few times, and shake out the absinthe. The perfect amount will cling to the glass to give the cocktail the necessary zest. Strain into this glass the whiskey concoction, twist a rind of lemon peel over it for some extra flavor, but do not drop the rind into the drink-the lemon peel will overpower the cocktail otherwise. Some bartenders add a cherry, which makes for a nice garnish but is not absolutely necessary.


Kentucky Whiskey Cocktail


The ingredients needed for this libation are the following: 1 generous shot of bourbon whiskey, 1 shot of unsweetened pineapple juice, and 1 lump of sugar.


Begin by dissolving the sugar in the pineapple juice. Add in the bourbon, then followed by some ice cubes. Stir, then strain into a serving glass.


This cocktail can be made with whiskey, but then it would not be a true Kentucky Whiskey Cocktail, although the name might suggest something different. Some make this cocktail with orange juice instead of pineapple while some use sweetened pineapple juice. In the case of sweetened pineapple juice, the lump of sugar may not be needed.


Old Fashioned Cocktail


1 lump of sugar
2 dashes of bitters
1 large shot of whiskey
1 lemon peel
1 chunk of pineapple
1 orange peel
1 maraschino cherry


Add the sugar lump and bitters into a bottom heavy glass and muddle. Pour in the shot of whiskey and stir with several ice cubes. Do not use a shaker-allow the mixture to remain in the glass it was first mixed in. Garnish with the orange peel, chunk of pineapple, and the cherry with a dash of the maraschino juice. Twist the slice of lemon peel over everything and serve with a spoon.


Although this cocktail is indeed old fashioned it is as appealing to good taste now as it was on Derby Day a half century ago when the originator first stirred it into being at the Pendennis Club in Louisville, Kentucky.


The Old Fashioned has been a New Orleans tradition for countless years and when other whiskey drinks with fancy names have come and gone, the Old Fashioned will continue to entertain experienced palates. Do not try and use gin, rum, or brandy to take the place of whiskey in an Old Fashioned. An authentic Old Fashioned demands whiskey and a sturdy bar coaster.


Blue Blazer


1 lump of sugar
1 large shot of Scotch whiskey
1 shot of hot water


Have two mugs on hand and in one, dissolve the lump of sugar in the hot water. Next add the whiskey; be sure it's a quality brand with a high alcohol percentage, for it has to burn. Then carefully ignite the mixture. Hold the burning mug in one hand, then empty the fluid rapidly from one container to the other so that a streak of blue flame connects the two. Serve in a glass that is appropriate for hot liquid after twisting a bit of lemon peel over the mixture and topping with a grating of nutmeg. It is recommended to place the hot drink on a stone coaster of some kind to avoid damaging the surface it is resting on.


If you have cold feet, chattering teeth, the shivers, or frozen fingers, and want to warm up, you can thaw out no better than with a Blue Blazer.


This drink was a popular alcoholic drink aboard the lavish paddle-wheeled steamboats that churned the waters of the Mississippi during the time the Natchez and Robert E. Lee made history in upstream races to Saint Louis. The bartenders were expert in transferring the blue-flamed liquid from one mug to another, accomplishing the task with an agility that kept the flames from singeing their beards and moustaches before deftly placing the burning drink down on the patron's drink coaster!

Gluten comes in many forms, and there are almost endless ways it can be described on an ingredients list. Sometimes the only real way to know if a product contains gluten is to look for the ‘gluten-free’ sign, or call up the manufacturer. To help you out, here are a few of the ways gluten can be described on a list of ingredients.


Wheat is the most common form of gluten


Looking out for foods that contain wheat is a good way to start eliminating gluten from your diet as this is the primary source. There are many words that mean wheat, and these include durum, bulgur, dinkel, kamut and spelt, although there are many more. Common wheat containing substances that you might find on a list of ingredients include semolina and couscous.


There are some substances that may or may not be derived from wheat, and sadly many manufacturers do not specify whether this is the case on their packaging. If you see substances such as starch, bran, hydrolyzed vegetable protein or dextrimaltose in a food product, avoid it unless you know for sure these are derived from a gluten-free source.


The word flour can mean many things


When you see the word flour on its own in a list of ingredients, it probably means wheat flour, or literally ‘ground wheat’ as this is the most common type of flour. If a different type of flour is used, this will usually be stated on the packaging. Safe forms of flour that don’t include gluten are rice flour, potato flour, buckwheat flour, chestnut flour and corn flour.


There are many ways that wheat flour can be described, but don’t be fooled, they all contain gluten. Some descriptions of wheat flour include plain flour, self-raising flour, stoneground flour, wheatgerm flour, malted wheatgrain flour and wholemeal four.


Other gluten containing substances


The two most common gluten containing substances besides wheat are barley and rye, so look out for these when you are checking out ingredients. There are a number of derivatives of barley that you might not realise contain gluten and these include caramel coloring and malt, which can be in the form of a flavoring or vinegar.


As you can see, there are countless words used to describe foods that contain gluten, and derivatives of these substances; we have only touched the surface here. Halloween Recipes

Halloween Foods


Haunted Forest Platter



Ingredients:

3 stalks broccoli
3 medium beets
wood toothpicks
3 hard-boiled eggs
assorted fresh vegetables (such as cherry tomato, pea pods, kohlrabies, radishes, sweet red peppers, sweet
yellow peppers
1 ounce spaghetti, cooked and drained
liquid green food coloring

Directions:

1. To make a haunted forest, first create trees.
2. Cut bottoms from stalks of broccoli to make 6-inch broccoli trees.
3. Slice beets about 1/2 to 3/4 inch thick to make a base for broccoli trees.
4. Break wood toothpicks in half.
5. Insert three to four toothpick pieces into bottom of each broccoli stalk and then insert into a beet slice.
6. Stand broccoli upright.
7. Cover to keep moist.
8. To make egg ghosts, use a small knife or 1/2-inch aspic cutters to hollow out eyes and mouths to form a face.
9. Cut small pieces of ripe olive to press into hollowed-out areas for eyes or mouth, if desired.
10. Cover to keep moist.
11. Using your imagination, create creepy creatures with tomatoes, sweet peppers, pickles, olives, and radishes.
12. Place broccoli trees on serving platter. Cover surface of platter with shredded carrot.
13. Hide egg ghosts in forest along with creepy creatures.
14. Scatter piles of vegetables such as pea pods, beet slices, kohlrabi slices, olives, pickles, and/or any other
desired vegetables.
15. Add strips of red pepper to the broccoli branches.
16. To make moss, add a few drops of green food coloring to a small amount of water in a medium bowl.
17. Add cooked spaghetti and let stand about 5 minutes.
18. Drain and place over broccoli trees.
19. Keep platter covered until serving time.
20. If necessary, spritz platter with water to keep it moist.

Googly Eyes - R You Looking at Me?



Ingredients:

10 canned lychees
10 maraschino cherries, stems removed (or Drunken Cherries Aka Cherry Bomb)
10 chocolate chips

Directions:

1. Drain lychee`s on a paper towel.
2. Place cherries in with stem side out.
3. Place chips into where the stem would have been.
4. Garnish:.
5. Drizzle some of the cherry juice over the lychee`s to make it look blood shoot.
6. You can pre make these and cover these in vodka or rum for an adult drink drop one of these in each drink or
into a punch!

Halloween Sandwich Treats



Ingredients:

8 slices pumpernickel bread
4 ounces cream cheese
1/2 cup pimento stuffed olive
4 pimento stuffed olives

Directions:

1. Slice each of the 4 olives in half. Set aside.
2. Spread 1 oz cream cheese on 4 of the slices of pumpernickel.
3. Chop remaining olives and divide evenly, spreading over top of the 4 cream cheese-topped slices.
4. Top 4 sandwiches with remaining slices. Using a knife or large cookie cutter, cut each into a pumpkin shape.
5. Use small dots of cream cheese to attach eyes of reserved sliced olives.
6. VARIATION: Following directions above, make pumpkin-shaped peanut butter & jelly sandwiches. Use dots of peanut butter to attach raisins for eyes and mouth.
7. Serve with slices of pumpkin bread cut into spooky shapes with cookie cutters, if desired.

Ghoul-Camole



Ingredients:

2 large avocados, peeled, pitted, and diced
1/3 cup fresh cilantro, chopped (use more or less according to taste)
2 garlic cloves, finely minced
1 shallot, finely minced
2 tablespoons lime juice
2 tablespoons sour cream
1 small tomato, diced
1/4 teaspoon Tabasco sauce

Directions:

1. Process all ingredients together until the mixture has a lumpy consistency.

Pizza Mummies



Ingredients:

2 English muffins
1/4 cup pizza sauce
2-4 stuffed green olives or pitted black olives, sliced (need 8 slices)
2-3 pieces mozzarella string cheese

Directions:

1. Toast English muffins.
2. Preheat oven to 350*.
3. Lay 4 muffin halves on baking sheet.
4. Spread a tablespoon of pizza sauce on each muffin half.
5. Set 2 olive slices in place for eyes on each muffin half.
6. Pull string cheese into pieces and lay on muffins above and under “eyes”, layering them to look like mummy
wrappings.
7. Bake for 10 minutes or until cheese is melted.

Eyeball Platter



Ingredients:

6 hard-boiled eggs
1/4 cup mayonnaise, plus
2 tablespoons mayonnaise
3/4 teaspoon paprika
12 pimento stuffed olives

Directions:

1.Cut through hard cooked egg in half.
2. Scoop out yolk.
3. Place cooked yolk in a bowl and mash with a fork.
4. Stir in mayonnaise, paprika and salt to taste.
5. Mix thoroughly and fill egg white eye socket with mixture.
6. Smooth yolk mixture.
7. Press olive into yolk mixture so pimento is facing out.

Prep Time: 5 minutes
Cook Time: 1 hour, 00 minutes
Ingredients:
2 1/2 pounds chicken wings (about 15)
Marinade:
3 tablespoons oyster sauce
2 tablespoons light soy sauce
2 tablespoons Chinese rice wine or dry sherry
1 garlic clove, minced
1 green onion, diced
Salt and pepper, to taste
Preparation:
Preheat oven to 350 degrees F.
In a small bowl, combine all the marinade ingredients.

Place the chicken in a shallow glass baking dish and brush with part of the marinade. Bake the wings for approximately 1 hour, turning over at least once, and brushing with the marinade 2 or 3 times during cooking. Serve hot or cold as an appetizer.

•15 chicken wings
•1 tablespoon honey or syrup
•4 tablespoons hoisin sauce

•3/4 teaspoon salt

•1 scallion (green onion, spring onion), finely minced
•1 slice fresh ginger, minced
Preparation:
Marinate chicken wings for 15 minutes in a mixture of honey, hoisin sauce, water, salt, pepper, garlic, scallion, and ginger.

Heat oven to 350 degrees. Place chicken wings on a baking sheet and bake for 30 minutes, brushing occasionally with marinade.

Turn oven to broil and broil chicken wings five more minutes. Turn wings every two minutes to avoid burning.

To serve: Transfer chicken wings to a serving platter and serve hot or at room temperature.
